I've been watching a lot of old NHL fights from the 80's- early 90's. Too many goons to list, but a few stood out. I learned from the YouTube comment section that the NHL fight fans downgrade Probert and Brad May because they would always take off their jerseys immediately after the first punch, thus making it harder for the opponent to clutch/grab them. Sounds like "smart hockey" to me.
Most of the fights were lame...lots of build-up, no action...but, a few goons stood out
Probert - big, strong, and seemingly the most savvy of the fighters. Would let guys flail and then lend a couple finishing blows at the end. Could take a punch, too.
Stu Grimson - very scary guy. Don't know why anyone would want to fight him. A notch below Probert, but very menacing and great single-punch power. Knocked out Beukeboom and Odgers with one punch each.
Tie Domi - much smaller than I remembered. Could take a beating and not fall down. Probert said that punching Tie Domi's head was like punching a bowling ball.
Shane Churla - I don't remember this guy at all, but he was my favorite. Ripped to shreds by youtube posters for fighting small guys and ducking the big boys, yet a slash-and-hack artist who unsurprisingly gained immediate NHL employment upon retirement. My two favorite clips...

"Here we see Grimson cross check Churla in the face. Grimson is immediately sent to the box. Go to the 1:24 mark in the video, and Churla tries to stab Grimson in the face with his stick while Grimson is sitting in the penalty box. Great move!"
