How are the rosters on this game/series? Do they have any of the teams top prospects that aren't in the NHL yet, or is it just NHL level players.

If you mean guys like Tavares, they are normally added on the first patch after their play can be judged. Stamkos was added I think around October/November or so. The demo has no rosters viewable so can't really tell you.
