quick question. If I downloaded the early access and wanted to download the retail would I need to download the entire 7 gigs again or is it just like an unlock feature where the entire game is now accessible?

If you click Triangle on the early access icon (on ps3 of course) it'll give you a purchase option. I don't think you have to download it again if you do that.

How much of the Franchise/Owner mode can be done online? I like that in NCAA, I just have to turn on my system to play the game of the week and arrange my depth chart. I can recruit, assign Red Shirts, and do offseason duties on the computer. If I had Season Ticket, I could advance the week but this year I have to turn on the system to do that.

You can just buy it from the store as well. The ps3 recognizes you have the game on your system already and just makes you download a 600kb game unlock it takes 2 seconds
