I've always found it's easier to teach and play man. Zone concepts can get complicated and if you don't have it exactly right you are going to get killed. Man is pretty easy to teach with the simple ball side/help side concept and with man you can dictate the pressure a bit more and even with more athletic teams if you can dictate pressure and rotate 2 man assignments well enough you can get the athletic team playing way to fast and frantic to effectivly use their athleticsm on the offenseive end.
Athletic teams like to play at their own speed. If you are able to speed them up too much they hate it. Throw in a zone gimmick out of timeouts every now and then to change the pace and you can really control the game on your defensive end even if you don't have the ball.
