You should judge the gameplay on the speed of it, smoothness of it (how fluid does it look), player interaction, and the physics behind tackles, blocks, etc.
The AI is dumbed down in the video and it is obvious by the angles the defenders take towards the ball carrier on several plays.
You can't judge blocking assignments, angles, speed, tackling, and ball awareness from this video because its on rookie. It's going to be completely different on All-Pro and All-Madden.
And if it's not on rookie and is actually All-Pro then I could be worried. But I'll still save judgment until I play the game on all-madden.
Not only that, but Kansas City is one of the worst teams in the game and probably has the worst run defense in the game. Atlanta's defense isn't much better, either.
Rookie was made for children to be able to pick up the controller and score touchdowns at will so don't get your panties in a twist just yet.
