Because you can watch playoff hockey, see less fights and notice little to no difference. Stars aren't being taken out. Buildings aren't burning down. The world isn't ending. When you watch olympic hockey..if you do..does the nature of the game seem different or worse? There's no fighting there. If you see any game without a fight does anythign seem "off"? Is it less of a game? No. Fighting "supporters" like leaffan already admit fighting is going away...and they don't seem concerned that hockey will cease to exist or the game will be worse.
I don't think anyone claimed anarchy or disaster. Just that it changes the complexion of the sport. I can still watch NFL games and most would say little to no difference. But I most certainly have seen it and its fundamentally changed the game and eliminated a position (style of position to be specific)
I think those arguing for would say the same for hockey.
